Breakfast Go-To’s during pregnancy

Over the last 2 months I’ve really been strict on myself in regards to not skipping breakfast and ensuring that my breakfast meals encompass multiple food groups. Here are my top 2 go to meals!

*Sometimes when I’m feeling extra hungry, I combine the two but lessen my portions. I’ll add one scrambled egg to my oatmeal or i’ll add an english muffin to my egg/spinach scramble.

Spinach & Portuguese Sausage Scramble

  • Slice SILVA Portuguese Sausage and put it in the skillet until it starts to brown
  • Add a teaspoon of Extra Virgin Olive oil. I also utilize the oils from the sausage to sautee and flavor the spinach.
  • Add Himalayan pink salt, pepper, and garlic powder to spinach.
  • Crack two eggs in the pan as the spinach begins to look like the photo.
  • Scramble it all up!

Old Fashion Oatmeal

*I don’t use a measuring cup for any of this except my fruit portion so the portion size is up to you!

  • Boil water, dump in old fashion oatmeal. I prefer whole oats.
  • Let it cook for 4-5 min.
  • Add in a little almond or soy milk to make it a little creamier.
  • Let it cook on low for 2-3 minutes to get thick.
  • Let sit with NO HEAT to get even thicker, if you prefer.
  • Slice up half a banana, top with 1/3 cup of organic blueberries, chopped walnuts or almonds, and drizzle with honey.
  • I also drink a glass of almond or soy milk.
